
1/2 packet dry ranch seasoning
8 medium sized red potatoes, diced
2 tbsp crushed garlic
2-3 tbsp olive oil
1 onion, diced
Shredded cheese
Diced potatoes & onions, then add garlic, 1/2 of a packet of dry ranch seasoning, and olive oil to an oiled baking dish, then mix well.
Bake, covered at 375° about 1 hour or until potatoes are softened. Sprinkle cheese over the top and return to oven for 10 mins. Serve with chicken cooked similarly with the oil, garlic, and ranch (I added bbq sauce to the top of the chicken instead of cheese for the last 10 mins) and serve with choice of vegetable. Enjoy!
